Skinny Pasta Alfredo with Spinach


My children request pasta most nights. That is always a good start! My brother was joining us for dinner and he loves Parmesan cheese, so that got me thinking! I had all the ingredients for my Skinny Pasta Alfredo with Spinach. This dish is simple, nutritious, delicious, and packed with protein!

After I started arranging the ingredients on the kitchen counter, my son raced to find the measuring cups.  My daughter pushed a chair over to the stove, ready to watch the water boil. My children prefer spaghetti noodles but any noodle tastes great with this decadent sauce!

We measured, stirred, and enjoyed watching my son attempt to crack an egg and save the yolk (this took a couple of tries but my son utilized his hand eye coordination)!

We sat down around the family dinner table and slurped the yummy pasta up! It tastes delicious alone or along side a green salad, grilled chicken, or grilled fish. The best part of this meal was spending time together! Get messy! Have fun! And eat healthy!

My healthy version of Fettuccine Alfredo.

Skinny Pasta Alfredo with Spinach Recipe:                                   
(Serves 4)

10oz whole grain spaghetti- I prefer Barilla Plus Noodles
½ cup low fat cottage cheese
½ cup 2% Greek yogurt
½ cup Parmesan cheese
1 lemon- fresh squeezed
1 egg yolk
2 cups fresh baby spinach
¼ cup water from cooked pasta
1 tbsp extra virgin olive oil
sea salt and freshly grinded pepper to taste
crushed red pepper to taste

Directions:

1.)  Cook pasta according to package directions. Save ¼ cup pasta water. Rinse noodles and set aside.
2.)  In a bowl, combine pasta water, cottage cheese, yogurt, Parmesan cheese, lemon, and egg yolk.
3.)  In a saucepan, on medium heat, warm up creamy mixture for 3 minutes.
4.)  Add spinach stir for 2 minutes.
5.)  In the noodle pot, put on medium heat and add olive oil.
6.)  Pour creamy mixture onto noodles and stir for 2-3 minutes. Sprinkle on salt, pepper, and crushed red pepper to taste.
7.)  Garnish pasta with fresh shredded Parmesan cheese.
