Healthy Tip #1:
When a recipe calls for lemons- fresh are best! When you are shopping at the grocery store, always put a lemon or two in your cart. Lemons last up to two weeks, and you can whip up wonderful recipes with a simple squeeze (lots of lemon recipes to come!). Most important, it will amaze you how much fun a child has squeezing lemons!
My Family's Favorite Grilled Lemon Chicken
4 6oz chicken breast cutlets- I prefer chicken on the thinner side.
2 lemons
1 tbsp sea salt
1 tbsp pepper- freshly grinded
2 tbsp dried rosemary
1.) Place chicken breasts in a medium bowl.
2.) Squeeze juice of both lemons on chicken until chicken is drenched in lemon juice.
3.) Sprinkle on salt, pepper, and rosemary.
4.) Allow chicken to marinate for 10 minutes or as long as 40 minutes if you like more lemon flavor.
5.) Grill chicken for 11 minutes or until it is cooked through.
