Cooking

Tonight's healthy meal consisted of Annie's Shells & Real Aged Cheddar.  Under the adorable picture of the smiling bunny (whose name is Bernie- I just noticed that) on the box it reads, "Totally Natural" and "Made With Organic Pasta."  Ummmm... I made dinner straight from a box using powdered bright orange cheese.

Don't be upset with me just yet, dinner was not a complete unhealthy mess tonight!  I roasted asparagus, and both my children ate it and liked it!  My son helped me snap off the bottoms of the asparagus spears.  Snapping is always fun!  He also carefully laid each asparagus side by side on the baking sheet.  He created a masterpiece, and it kept him busy for ten minutes.  After lightly drizzling on olive oil, and sprinkling on salt and pepper, we sent the asparagus into the oven to roast for 20 minutes.

After taking out the asparagus and noticing their glistening green glow, I figured it was a good time to utilize my photography skills.  I placed the plate near the window trying to capture the best angle, and two little hands started swiping the asparagus!  TA DA! A meal well done after all!

Try this quick, easy, and delicious Roasted Asparagus Recipe:

Preheat oven to 425 degrees
1 bunch asparagus- rinsed and bottoms snapped off
1 tbsp olive oil
1 tsp sea salt
1 tsp pepper

1.) On a baking sheet lined with foil, lay asparagus side by side.
2.) Drizzle on olive oil.
3.) Lightly sprinkle on salt and pepper.
4.) Bake in oven for 20 minutes or until the tops appear a bit crispy.
